Forgotten Spuds

On overcast wintery days, nothing quite warms your soul like a steamy bowl of vegetarian black bean chili over macaroni and cheese (made with vegan butter and soy milk).  Sometimes you just need good ol comfort foods.  After settling in and enjoying with our warm bowls of chili and cheesy goodness, I decided I would end the evening with a batch of warm homemade vegan gluten free carob chip cookies.
After cleaning up the dishes from dinner, I began to prepare the cookie batter and turned to pre-heat the oven to 350 degrees.  It was then that I realized the oven was already on!

I opened the oven door and to my surprise, I realized I had forgot the baked potato(s) which I had initially set out to make for Bryan before I had changed course and opted for the macaroni and cheese/chili combination.   Ooops! Those little wrinkly spuds had been baking away at 350 degrees for close to 2 1/2 hours.  I'm not even going to say what I thought of when I saw these little guys, you can decide for yourselves:

Spicy Turkey Pasta - A Husband Favorite!

I felt like I should post the recipe for our own recipe for Turkey Pasta - our go-to Household Favorite!!! Bryan's mom, a wonderful Italian cook, makes amazing pasta that I cannot even begin to compete with.  Meat sauce is traditionally made with ground beef, but being that I was raised on Turkey with pretty much everything, we have made our own simple twist on Spicy Turkey Pasta that is sure to please every-time and can be made in less than 20 minutes!

1 large can or jar of Marinara sauce
1 lb. extra lean ground turkey
1 cup sliced mushrooms and 1/2 chopped onion
Italian Seasoning + Parsley (fresh is best, but dried herbs work well too)
2 cups cooked whole wheat pasta (Rotini or Angel Hair Pasta)
1/4 c. parmesan cheese (grated)
Some chile flakes & Tapatillo to spice it up!

Brown meat first while pasta is cooking, then add in sauce and above ingredients and let flavors marinate with a cover on the pan for 10-15 minutes. Also makes great leftovers!

Fast & Easy Tostadas!

I was able to scrounge together 6 items which most everyone has in their kitchen to make these quick and yummy tostadas! They may not be Barefoot Contessa caliber, but they did taste delicious and only took 10 minutes to make!

 Start with tostada shells layered with fat free refried beans.

 Add layer of lean ground turkey with taco seasoning.

Smother in grated sharp cheddar, sprinkle chopped lettuce.
Top with salsa and jalapenos and voilĂ !
