Unconventional Healthy Favorite Salad Toppers

These two toppers have been a staple around my salad of late:

1) Tahini (nutty flavor + thick consistency adds depth to the leafy greens)

2) Nutritional Yeast Flakes (cheesy and light, surprisingly tasty!)
Nutritional yeast is NOT traditional yeast...even safe for those with Candida! I read about this tasty topper in Kimberly Snyder's Beauty Detox book.  She incorporates this ingredient in a lot of her recipes! Although it is a bit on the pricy side, around $9.00 a bag, it lasts a long time as you only use a little bit each time!

Life is Short- Eat Dessert First!

My mother always told me, Life is Short, Eat Dessert First! My mother is a wise woman, perhaps even more wise than she even knows! Traditional notions of common sense tell us we are being "bad" if we eat dessert before dinner.  In fact, we often are told not to "spoil our dinner" by eating dessert before hand.

I don't mean to rock the boat for those of you conservative foodies out there; but it turns out, the opposite may be true!  In fact, if we elect to consume a fruity dessert post supper, we may have spoiled our dinner, literally, as our tasty dessert sits rotting on top our just eaten dinner like a inner-being compost.

The Beauty Detox Solution, by Kimberly Snyder, states that fruits should not be consumed post-meal. Why? Because fruit is digested and processed through our bodies at such a rapid pace - most fruit enters and leaves our bodies within 20-30 minutes! So when you think you are being healthy by opting for a fruit dessert instead of that cheesecake, you make want to think again.

Turns out, fruit, is digested nearly effortlessly by our amazing bodies if we consume it on an empty stomach.  Our bodies are able to digest and absorb the minerals and vitamins from raw fruit the best this way.  If, on the other hand, we have just consumed a meal full of starches, proteins and/or fats, that food will accumulate in our stomachs while our bodies begin to digest and break down the food to send it through our intestines.  This can take hours, depending on the food we just consumed.

Therefore, if we consume fruit AFTER dinner, or a meal, the fruit cannot bypass the other food that is still trying to be digested by our bodies and will ferment and basically ROT in our bellies, prohibiting us from obtaining the benefits of the fruits at all.  This is referred to by Kimberly, in her book The Beauty Detox Solution, as "sludge."

This sludge prevents our bodies from effectively digesting food - and the energy that is used to digest our food cannot then be energy that our bodies can use for other purposes.  In my interpretation of her book, the main premise is that more energy = more beauty.  In order to obtain maximum outwardly beauty, we need to consume not only the correct foods, we need to also pair the correct foods together and consume them in the right order (light foods such as fruits, should be consumed on their own (on an empty stomach or at least 20 minutes before you consume a meal or other food(s), then greens and non-starchy vegetables, then finally starches or proteins last) so as not to jam up our stomachs and digestive tracts with a big fermented rotten mess!

Makes perfect sense to me!
 


Shown above is a DELICIOUS creamy, frozen and smooth fruit sorbet I made with our Vita last night.  We ate it after dinner.  Oops... I guess I read the portion about fruit rotting in our stomachs a day late.  Oh well, life is about living, eating and learning right? Next time I make this sorbet I will eat it 20 minutes before dinner!

How to make the fruit Sorbet-

Blend together any variation of frozen fruit you feel like, I used:
Frozen blueberries
Frozen pineapple (I cut fresh pineapple and freeze it which makes for great addition to smoothies plus pineapple is good for digestion and supports weight loss in Type A bloods)
Frozen cranberries 
1 cup soy/almond/hempt milk
Blend on high until 4 little mounds form in the Vita.  Scoop and serve!

Note: You can try adding 2-3 ice cubes if you want the sorbet to be a bit "icier."  Enjoy - but remember to eat dessert first...fruity desserts, that is :)

CSA: To Join or Not to Join...That is the Question.


I have been debating whether or not to join a local Community Supported Agriculture group.  The following benefits of joining a CSA appeal to me:

1) We would obtain fresh produce, that is in season and grown organically and locally - so we know where it comes from and when (relatively speaking)

2) We are supporting local farmers :) and

3) It would be kind of fun to get a basket of fresh fruit and veggies every week or every other week - I mean, how cute is that!?

Has anyone ever joined one? Any pros or cons? I mean I am all for getting fresh veggies and fruits that are grown without pesticides, hormones or GMO's, but is it worth the money? It would lessen time at the market which I am all for! And I wold kind of like to meet the farmer who grows the produce we are putting on the table! I mean how old fashioned and fantastic would that be?

I am wondering though, just the two of us, would we need a weekly or bi-weekly (2x's a month) pick-up? Decisions...Decisions....

I Got it Right...or so I thought...

Do you ever have those days, or days that turn into the nights, where you just canNOT seem to do anything right? Or is it just me? Ok, well, allow me to explain why the past two nights, my sweet husband has taken it upon himself to be the chef for our eveing meals.

Let me lay out the procedural history first, as any lawyer would when briefing the Court or Client:

It all started Monday morning; I had a doctor appointment in the AM which didn't go that well - and what I mean but that is, it is never a good sign when your mother actually gets up and leaves the room mid-visit, and then, the doctor actually leaves the room promising to return, but then never does.  True story.

Then I drove 50+ miles to work, 40+ miles to Trader Joe's after work to pick up items that are way too expensive to get at Mother's (side note: don't you just love how you have to go to at least THREE grocery stores to get all the damn food for two people to eat healthy for a week?)

After TJ's I sped home, exhausted.  I lugges the bags up the stairs, unpacked all the groceries and put them in the fridge, and then began cooking right away.  When I had last left B, it was after the doctor appointment where he said he would be home for dinner around 8:30pm.  So I had about an hour.  I was excited to get going on a tasty meal that he could come home to.  I decided on flavorful quinoa and a raw veggie mix.  I also thought I'd heat up the breast of chicken leftover in the ziplock baggie in the fridge from, oh I don't know, about a week ago for B.

I boiled 2 cups organic chicken broth on the stove, poured a cup of quinoa in it, along with some chopped onions, minced garlic cloves, and let it cook.  To my utter glee, when I lifted the pan lid, I saw beautiful fluffy quinoa flakes, light and steamy.  I was so excited because this was the first time I had ever successfully cooked quinoa (despite numerous previous attempts which shall remain a mystery).  I ground some Himalayan salt into the pan and fluffed.

As for the raw veggie mix, I chopped cucombers, mushrooms, and added 1 tbsp. olive oil, 1 tbsp. fresh salsa,  ground pepper, and a squeeze of lemon.

The chicken, I must admit, was a bit of an afterthought, hence the plastic looking overlay of over-broiled and then cooled cheese shown in Exhibit A to the right.

See, 8:30 came and went, and before I knew it, I had eaten the quinoa and veggies, nearly fallen asleep 3 times on the couch, and around 9:45 B walked in.  I told him his dinner was warming in the oven - and had been for an hour.  He said it smelled good.  I was grateful for that compliment.  THen he sat down, ate one, maybe two bites, and started packing up his plate in a leftover container. 

I put my hand on my hip and said, "Um - exauuuuuuse me? What are you doing? You don't like it?"
Response: Is this the chicken from a week ago?
"Yea."
Is it still good?
"I don't knowww! Why arent you eating the dinner I slaved over for you?! I am so tired! Why do I even bother trying to cook if you aren't even going to eat it!
I'm not hungry! I had a few beers.  I love it though babe and I'll have it for lunch tomorrow (sans chicken which was now face down in the trash)
"I'm glad you had a nice barley and hops nutritional and well -balanced meal!"  I proceeded to slump off to the bathroom for a bath to calm my fuming nerves. 

It only took 2 days later for me to get the truth.  The next day, when I got home from work I discovered the container of quinoa still in the fridge.  I looked at B and asked him point blank - what did you have for lunch today, and then darted between him, container, him, container, until he finally confessed "Ok I didn't like it!"

And therein lies the story for why B has been cooking the past two nights.  And can I just say, what a fantastic cook that little gipper is? I will post his fantastic RAW and gluten free Vegan meals tomorrow.


And on another note, I have been recently hearing and reading a lot about the benefits of Himalayan salt.  Also, the girl at the supplement counter at Mother's Market tonight was going on and on about how important the acidity and alkalinity in our bodies is and how it can affect inflammation .  I stood there trying to determine what cold water fish variety I wanted (Cod Liver, Krill, Salmon, etc) and half listened to her probing me for answers about whether I had ever tested my pH. 

However, in my ever persistent and cyclical jounrey to achieve balance and wellness in an anti-inlammatory body, I listened to her advice and pointers regarding supplements and vowed to go home and research. Turns out, my pink Himalayan salt I just started using can have an affect on acidity and alkalinity! AH - my mind hurts at all this supplemental crap!

Tea Time!

Hello, my name is Kate and I am a coffee drinker. 

 I've tried to be a cool "tea drinker" before and always envied those Eco-friendly, vegan, vintage-chic, braided haired girls sifting their satchels in hot water while I sipped my vanilla latte.  

Now, I have always liked Chai, but I found myself failing at making the switch to the eco-friendly vegan tea goer because I was always needing to add sweeteners or flavored creamers to tea to make it ingestible and/or enjoyable for me.  

However, I have discovered a new treatured tea that is my new obsession!

On a recent date night at Barnes & Noble, B and I each grabbed stacks of books and magazines and poured over our favorite reads over coffee and tea at the in-store Starbucks.  This is where my new found love for this tea was born, right there in the Barnes and Noble, as I sat there reading Alicia Silverstone's "Kind Diet."

I loved it so much I had to buy a tin, and have since considered alternate uses for this aromatic satchel: hang over rear-view mirror as car freshener, place in your "delicates" drawer, hang in closet, break open a few satchels and make bowl of potpourri as a table center piece. 

But as for tea, it's a definite YES for the upcoming fall and holiday season!

Make your own HEALTHY Dressing!

Look, if you told me 3 months ago I would be whisking together my own salad dressings for dinner salads, my response would have been
a) Why am I eating salad when I could be eating pizza?
b) MAKE my own dressing? You're kidding right?  No, seriously.  You're kidding.  Did time freeze and suddenly I have an extra 4 hours each day? Ya, didn't think so.

Alas, fast forward to present day and here I am in my little kitchen whipping together the above 4 ingredients to make a fantastically easy and healthy dressing.

Amount to use each ingredient ranges depending on how much you want to make.   If you want to store it for later use, I recommend storing in a mason jar and would only keep it for 1-2 weeks, shaking or whisking before later use.

For one night's use, I used 1/3 c. olive oil, 1 tbsp Balsamic, 1 tsp. Apple Cider Vinegar, and several shakes of Oregano or Italian Seasonings.

Whisk away and pour on your greens.  Now you can honestly say you are a true housewife.  You just made your own da** dressing!

Bye Bye Fro Yo

I walked past this disturbing sight outside of our local favorite past-time and felt a little bit better about not only saving $50-60 per month on Yogurtland dates.  This also made me slightly repulsed (this post is not intended to have the same effect on all readers).  But for sugar addicts like myself, anything that decreases (however slight) the exorbitant desire within me for sugar is another step forward!

On another note, Juicing fresh Orange, apple, carrot, ginger, and red cabbage is a nice sweet treat OR  if I don't feel like tacking the mound of dishes that accrues daily, I will opt for a easier clean-up option such as:

Perky's crunchy flax cereal with Hemp/Rice/Coconut Milk are my new post-dinner snacks (Dairy Free, Gluten Free, Wheat Free, sugar free, not 100% raw though, but still a decent snack!)

Fancy Vitamin Drink!

I have to wonder, how exactly do I know the vitamins allegedly housed in the cap of this bottle are actually legit?
Weird, but cool.  Has anyone tried this before? It was the first time I had seen it, the taste is actually pretty good.  But to be real, I struggled with the dang cap for like 5 minutes before I figured out how the stupid thing worked.  By the time I got it open, I was almost over it.

Banned from Sugar? WHAT?

You can take away gluten, meat, even carbs, but don't you DARE take away my SUGAR!

Now, I thought it would be fun and a bit challenging to create gluten free confections! But taking away my sugar? After I made the gluten free brownies last week and purchased coconut flour, Xantham Gum, and all the other necessary items I would need to whip up G-free treats, B looked at me and said, "You know, just because it's gluten free doesn't mean its good for you."  Turns out, he's wise beyond his years.

Fast forward to my appointment with my naturopath doctor.  She literally stared me straight in the eyes and told me, "No more sugar."  You can't tell that to a baker! Someone who literally gets HAPPY from baking, and eating, baked goods! I love sugar, white sugar, brown sugar, real sugar, fake sugar, sugar in the raw, powdered sugar, any kind of sugar is my friend! Or so I thought.  Well, as it turns out, sugar is my enemy and it's time for a revolution.

I am now on the hunt for all things sugar-free and gluten-free that actually taste good.  It's going to be a challenge, but when your health is on the chopping block, it's not really much of a negotiable issue now is it?

Glutton for Gluten?

It punches the villi of a celiac's gut and it's not nice. Gluten is evil." Anonymous 



I never considered myself much of a granola-type...

No, these are not my grandparents in case you were wondering...See link to "granola" above...for Urban Dictionary's definition of Granola.  Read: so not the same thing is "hippie!"
until recently, when the need to change my dietary customs hit me like a ton of bricks.  As I previously posted, I have been reading about the Inflammation Syndrome that I am sure will expolisvely hit widespread in America in the next couple years like the plague.

So why the sudden urge to be granola you ask? Well, the part I left out of my previous post on the Inflammation Syndrome was that I had been laid out, flat on the cold hard floor last Friday night from muscle spasms in my back.

After a couple hours of rhigamortis, I had finally had enough.  Bryan had to take me to the ER in my robe, because he couldn't go to bed with me lying there on the floor, with no idea when/if my body would stop freaking out.  This incident and experience alone was enough to jumpstart my search for a natural way to make myself feel better.  (ER's, as you can imagine, are not fun at 2:30am on a Friday night, the clientele is anything but, uhem, normal) But I knew it would take something like this to make my bull-headed-Taurus-self turn a corner.

I. like most warm blooded homo sapiens, have lived my life as a glutton for gluten.  I love my chocolate, cookies, cakes, chips, and ice-cream just as much as the next person.  But, for the most part, I think somewhere within all of us, we know the things we choose to ingest are bad for us, but we rationalize and continue eating those greesy and hydrogenated foods because, well, the manufactures put crack-like additives in them! I never thought (or didn't want to believe) those comforting indulgences had any direct correlation to making me feel like, well, crap.  I could see how eating processed foods could add inches to any waistline, and let's face it, I have yo-yo dieted enough to compete with Oprah for the title of best yo-yo-er.  But this time, my cognitive process is different, and my motivations for trying the gluten-free regime is completely and utterly the following: I want to feel better.  I want my body to function as the machine it was created to be.

Common rationalizations that I have used for years such as "Everything in moderation" and "Just one won't hurt me" just weren't sitting well with me after I began to read about the harmful effects gluten has on our system.  It's as if I woke-up (metaphorically) and realized my body has reached its threshold and is literally screaming and begging to be fed the fuel it needs to do its job right!

I also had no idea that within the days following my quest for anti-inflammatory health would the solution to my aches and pains become glaringly obvious.  Literally 4 people - two friends, a co-worker and a orthopedic surgeon - told me to go gluten free.  So, I have decided I needed to push my cravings for carbs aside and head off to Mother's Market to see what food was out there that I could stomach.


I slowly browsed through the aisles filled with supplements, homeopathic remedies, organic everything, alternatives to flour, and soon realized I had unknowingly entered a world I know nothing about.  Typically, I don't just do something for the heck of it.  I usually have to have a reason behind what I do, and that reason has to at least make sense to me.  The Inflammation Syndrome book I have been devouring convinced me, however, that the change in food production in American over the last thirty years has caused a dramatic decrease in the body's production of anti-inflammatory omega-3 compounds by 40-50% while increasing the content of free radicals adding to the pro-inflammatory burden, leaving our bodies with little to no fighting power against free radicals and disease.



Anyway, three hours and a detox juice later, I was packing my trunk with $235 worth of gluten free food and natural supplements.








Krill oil (stinks!), homeopathic and all-natural remedies, gluten-free alternatives, and pro-biotics, are just the tip of the iceberg. I am going to chart my progress through this G-free journey, and hope that anyone who also struggles with inflammation, digestive problems, stiff joints, and sleepless nights, among other health restraints can also benefit from learning how to live a cleaner and healthier life.

What does my sweet hubby think about all of this?  Well, I cam home and showed him what I had bought.  I pointed out the guacamole and quinoa macaroons with enthusiasm, as if I was trying to convince a kid that broccoli tastes like chocolate.  He looked at me and said, "I still need my meat!" And he's right, there will have to be some changes and compromise in the kitchen, because we are in this together.  Although my hubby does not have the same threshold as me, I feel it is my job to be my best self for him, and to help him be his best self.  Although there may be less pizza and more Quinoa in our house, if he and I can benefit from this shift in our dietary habits, we will both reap the rewards of feeling better and living longer, healthier lives together.

Oh, and of course, I stocked up on coconut flower, G free chocolate lava cakes, and much more.  So the baking will continue, after all, this has to be a lifestyle change that you can commit to.  I can't wait to see how creative I can get using healthier alternatives through my confectionary treats!

Anti-Inflammatory Remedies

After hearing a lot lately about woman in their late 20's to mid 30's being plagued by fatigue, inflammation, muscle and joint pain, cramping, and feeling altogether toxic...I decided to dive into some reserach about what is infiltrating our bodies and find out the cause and effect that our environment, food and drink we ingest, and altogether crammed lifestyles has on our health and longevity.  Like most people, it is way too easy for me to post-pone and prolonge making the seizmic shift to a healthier way of living and eating.  Just how damaging is our culture of instant gratification to our bodies and lifespans?                          Many people I know are altering their habits and food choices and opting for the gluten free, sugar free, Paleolithic type diets in order to change the way they feel.  It takes a solid commitment and most people wait until they are faced with an unpleasant diagnosis to decide to turn the corner and alter their habits.  They say it takes 3 weeks to change any habit.  I think it takes a lot more than that.  Research, understanding, planning, scheduling, and acquiring an affinity of nutty not to mention trying to find restaurants or So much of our culture and social agendas are based around eating and drinking.  You call up a friend and decide to catch up over a cup of coffee, desert, fro-yo, or brunch. A majority of family gatherings are often spent chatting and munching around the kitchen island or table.  More than a couple of my good friends have jumped on this gluten free, homeopathic remedial regime, and it does make it a bit challenging to say the least when you plan your net outing.  The good new is there are a variety of options now on menus at commercial dining establishments and at healthy grocers such as Mother's Market, Sprouts and Henry's.  But it is not so simple to alter your social agenda to the point of getting excited about planning a holistic and au natural meal...comfort food starts to take on a whole new meaning.  Coffee colonics, gluten free bird seed granola for $6 a package...It;s not that enticing to jump on that health train.  

But making small daily changes like popping a multi-vitamin and probiotic are easy switches that can get you started on the path to feeling better.  Recently, after a long week and achy joints, I bought a carton of Epson Salts and decided to draw a nice relaxing bubble bath.  It said on the carton to pour 2 cups of salts into a warm bath and soak in the relief.  I thought, double the salt, double the relief, right?
Not so much.  I ended up sitting on a grainy mountain of salt, and constantly had to shift to avoid chaffing my lower extremities.  Lesson learned, follow the directions, because often times, less is more!

Stressed for Success

I came across an article that struck me (in a devastating, thought provoking, compassion for other human beings kind of way) while I was catching up on the current news in the hair salon.  There I am, with foils all up in my hair, and I read the following heading:

"Gorgeous, Successfull...and Wanting to Die." Great Cosmo.  Real Great.  That's uplifting and definitely NOT the typcial "10 ways to Boost your Ego & Libido."  So, intrigued, I read on.

The article talks about 4 recent cases where young successful motivated, on-the-path-to-success women ended their lives tragically, and no one had a clue why, save for a few Facebook posts or a lonely journal entry after it was already too late to do anything. The article is cursory and not exactly journalism at its finest, but I do agree with the point it tries to make:

"The lives of driven, goal-oriented young women are becoming more hectic and isolated, due in part to a singular focus on career and a delay in developing a serious romantic relationship that can lead to feeling content and settled down...By their mid-to-late twenties, college educated women are thinking hard about marriage and children because they're aware that their fertility will start to decline, yet guys remain focused on casual hookups and partying. "

And I think it is so true.  This generation, my generation, of fabulous, beautiful, smart, motivated, and generally overachieving women such as my friends, often find themselves feeling overextended, underachieving in one area or the other, whether it be at home, in their personal life, or at work.  The constant multi gravitational pull combined with the never-ending drive ingrained in us is leading some of the most successful women to the brink.  (See article on how stress affects women's health here.)

On top of the stress our generation put on themselves, and society confirms, the young, talented,  educated women who are making their own living have to deal with playing the waiting game for men to grow up and decide they want to have "family night" instead of beer-pong tournaments.  Good luck trying to get a man to give up flippy cup for frying eggs.  Or God forbid say that darn 4 letter word.

The opportunities afforded women now-a-days add pressure to GO GO GO, conquer, prove you are just as good as the male counterparts as if the late feminist-movement women are infiltrating our minds, haunting and taunting.  Our bodies are naturally wired to be more emotional than men, to think with compassion and feeling, to nest, to feel a sense of satisfaction when preparing a good meal and feeling generally WOMAN-LY. But if you aren't trained to to be a domestic queen, then thats just another pressure on your back that you have to strive to meet.

Sure, the satisfaction of a high powered position seems provocative and alluring at face value, and the lucrative salaries matching qualified women afford them the opportunity to provide for themselves well into their 30's without relying on a man as a breadwinner.

But when man meets a woman such as described above, it is not uncommon for that man to soon feel disposable.  If a man does not feel "needed" or cannot adequatly provide for a woman as she is accustom to providing for herself, disapproval sets in and men become less chivalrous and women become more dissatisfied.  And the circle continues.

So it puts us women in between a rock and a hard spot.  Our generation has also grown up in broken homes, seeing the reality of exposed and publicized divorce and adultery which in turn leaves women guarded and cautious, putting up walls so as to circumvent the anticipated, inevitable heart ache of giving oneself completely to another and risking losing it all.  So I think a lot of women choose education, work, because they know no one can take their degree away from them.  They know that their work is is a fairly adequate reflection of who they are.  And if that means they are sacrificing love, then so what? It's not like fairy tales exist anyways right, Cinderella...puh -leeez.  I believe this is the fallout from an ever-evolving society focused on multi-leveled success which leaves women feeling below par when they cannot meet and please everyones expectations.  It has become expected not only to perform well in the boardroom but also perform at home, so as to not lead your man to stray.

Deep down, though, does't every career driven woman, no matter how hardened her heart has become, regardless of her views on feminism, truly desire to have a man come running after her in an airport, or to come along side her and sweep her off her feet onto his white horse and take her home to his castle? Disney planted those fairy tales in our minds, and though they my not be a precise or accurate reflection of reality, thats what dreams and hopes are made of right? And at the end of the day if we take off our stilettos, let our hair down and give into love, I believe we will truly feel right with ourselves.  And perhaps even more important than that is knowing our self-worth comes not from the title under our business card, or the number of zeros attached to our salary, but knowing in our hearts that who we are and what we offer the people who mean the most to us is what counts.  I hope every woman can come to a place in their soul where they know their true identity and meaning and desire to LIVE.  Live to experience the ups, the downs, and realize that the failures and losses in life make us stronger.  Life is way too short to spend it feeling inadequate.
