Weekday Duo-Dinners!

I find that one of the HARDEST things to do during the week is think of what to make for dinner. I have tried making lists before I go to the store for meals planned out through the week, and then I post a sticky note by the fridge for each day. But come Wednesday night, usually, I am over feeling like I am running a military style cafeteria, and usually throw in a Solid Kraft Mac n Cheese night, (with chili mixed in - try it, it's delicious) or a run to In-N-Out Burger...OK, so that was our dinner the past two nights, but we did have the following two meals the past week - they are super quick and easy and good to have in your arsenal for when your brain is fried and you are staring through your cupboards much like you stare at your full closet and complain you have nothing to wear!
So here are two mid-week meal ideas:
BBQ + BEER Chicken - Marinate in BBQ sauce and a beer of choice for extra flavor! Pair with Rice Pilaf and fresh sourdough bread, and a side salad of mixed greens, blue cheese and Raspberry Vinaigrette Dressing. (Thanks Mom!)
Taco Salad - Bryan's FAVORITE
Ingredients:
Head Iceberg lettuce
Lean Ground Turkey + Taco seasoning
Sm. can of Kidney beans,
Jalepenos (as many as you like)
2-3 ears fresh white corn (off the cob)
1/2 chopped red onion,
grated sharp cheddar cheese
Frito's Chips (fill ziplock baggie 1/2 - 3/4 way full of chips then crunch them up into smaller bits)
Toss with French's French Dressing - Top with sour cream or avocado slices or salsa! It is very versatile and can be made any way you like it!
