TOSTADA TUESDAY! (GLUTEN FREE STYLE)

This is a great and easy recipe to make - I recommend grilling up a few breasts of chicken on Sunday evening, then putting them in individual sized ziplock baggies to use throughout the week for fast meals!

This is a tostada with a G-Free twist!

How to make:

In a medium pot throw a half a jar salsa, shredded chicken (cooked), chopped white onion, jalepenos, and chopped tomato.  Let simmer on LOW for 20 minutes.

Then layer corn tostada with gluten free black beans, chopped mixed greens (darker the leaves the better for you, i.e. more nutrients) and top with chicken marinade.
